Herby Mushroom Pate

Herby Mushroom Pate

This recipe is simple and cheap to make. The pate is lovely served on buttered toast, makes a great light healthy lunch or can be served at as a party dip.


  • 250g chestnut mushrooms
  • 2x red onions- chopped small
  • 1 lemon (juice)
  • 15g butter
  • 1 tsp cumin seeds
  • 1 tsp grated nutmeg
  • 1 tsp ground coriander
  • ½ bunch chopped coriander
  • 2 tbsp olive oil



1. Heat oil and butter over a low heat.
2. Add onions and spice. Fry until soft (approx 5 mins).
3. Add mushrooms.
4. Add lemon juice and fresh coriander.
5. Take off heat and blend together as coarse or as smooth as you like - either in a mixer or with a stick blender.
