wild Mushroom rissotto

Made this for the first time last night and OH MY WORD! it's lush!!!!! (just finishing it off now!)

400g rissotto (enough for 4 people!)

1 onion (cut finely)

1 pack wild mushrooms (i found a pack of dried ones on a shelf in co-op!)

1 carrot

1 pack of creamy garlic mushroom sauce for veg!

and stock water (of which ever veritiy you like!)

 

Soak the mushrooms in the sauce for as little as 2hrs! (the longer the better!)

heat a little oil in a pan throw in the onion and fry for a few mins

put 400g's of rissotto rice in the pan and add (how ever much water it says on the pack) little by little! (i also added in half the sauce with the mushrooms in it!)

keep stiring the rissotto and when it starts to look dry again pour in some more water (got this tip of Jamie's 30 mins meals!) keep adding stock water & the sauce to the rissotto till it's to your taste!

with the rest of the sauce (if you have any left!) add a little more water to it and blitz it up to make a smooth sauce, you can then pour this over what ever else you have with the rissotto!

Now your probably thinking but what about the carrot!!! at the last min i decided to grate a small carrot in to the rissotto and ok you cant taste it's there but it's just a little extra that is actually really nice! as you grated it, it can be chucked in right before you serve it up!!!

If you find the rissotto too thick add some more hot water to it keep adding till your happy with it!!!

Now obviously I'm vegetarian and if you just have to have meat with this i hear if you add some sort of bacon or pancetta (if that's spelt right!) that makes a good mix too! prob cut it in to small peices tho!!!

last night i also made some lovely roasted spuds!

6 spuds (or how ever many you do for your family!)

take your spuds LEAVE skins ON! (but cut out any bits that your really don't want to eat! lol) cut these in to 4-6 peices each (depends on size!)

par boil spuds in pan of water till there just going soft, drain all the water out add in a little butter put lid back on pan and shake pan to mix the butter on to the spuds!

pour the spuds on to a roasting tray drizzle oil over the top

add a LITTLE bit of salt (and we have a spice pot called every day spice) it's got salt, pepper, basil, rosemary, tyme all that sort of stuff in it! genrously shake over your spuds and mix all together

put in oven for 35-40 mins till crispy

tuck in and enjoy!!!!!!!!!!!! nice crispy skins and fluffy potatoe middles!

i found it in CO-OP a packet mix powder that you add milk to cook in saucepan and it's the sauce! lol all i remember off the packet it said that it was SAUCE FOR VEG! you'll have to look out for it!!! but really any sort of creamy sauce will do! you can always add your own garlic to it to make it a garlic sauce!

if your after veggie meals i make a really good pasta bake!!!!! (a classic i know!!!)

REALLY EASY PASTA BAKE!

pasta (of any sort)

veggies (i chose up to 6 or 7 defferent veggies)

1 medium red onion

pasta sauce of any veriety! (i mainly go for tomartoe with garlic and/or herbs!)

tin of chopped tomarote

Ten tonn of cheese!!!!!!!!

mozerella, mature chedder and red leicester (mix the mature and red together but slice the mozerella seprate!)

cook the pasta and what ever veg you have got that needs to be cooked IE. carrots! fry the onion a little bit!

when all is cooked up chuck in to an oven proof pot mix in the veg

pour over the tomartoes mix them in, then pour the sauce over mix that in!

put the mozzerella on all over the top! put on the rest of the cheese mix and bake in oven for up to 1hr!! (depending on how crispy you like the cheese!)

this is the easiest pasta bake i'v ever come accross and it's my own recipe!! (altho it's a classic!) it changes every time i make it and between 3 of us we can make it last for tea, dinner and sometiems even tea the next night! (ok i usely cook for an army when i cook!!!!)

i'll come up with a few more at end of day most likely! i cant think right now as to what else i'v made other than a few pies! lol

i did a cheese, leek and potatoe pie which turned out pretty good!

shop brought pastry (as i haven't a clue how to make it!!!)

cheese,

leeks (how ever many you like!)

bout 4 potatoes peeled choped in to chunks

greese (or line) a round tin (i used a cake tin made it easier!)

peel the potatoes and cut in to bite sized chunks boil till there soft but still firm

prepair the pastry at this point! big enough to go in to your tin!! (with some left over for a lid!!!! put the bottom in (i didn't blind bake it and it came out a tiny bit soggy but was ok!!! so if you want to pop it in for a few mins then go for it!!)

chop the leeks in to 1cm peices (don't need to be prosise!!!) fry in a little butter till soft add some pepper to them at this point!

when everything is ready layer everything in to the pastry bottom i put the potatoes in first, then the leeks on top and cheese on top of that! (enough cheese to cover it!)

then pop the lid on, seal the edges with a little bit of egg and bake for aprox 30 mins till it's golden!!!

sit back and enjoy!

wicked news :) i also throw in a couple cloves of garlic in the pot when roasting them sometimes we'v got smoaked garlic at mo and that gose down wonders! lol

Hatz, I did so many potatoes, purely for the fact they had to be cooked or thrown, so ended up giving some to the neighbour. I rang and asked him if he wanted them for his dog, and his words were, 'forget the dog, I'll eat them'. Any left overs I normally have are passed on to him or the dog. I'll get his verdict on them later Smile

aww wicked :) glad they all go somewhere! hehe! my step dad's yard dog is very thankfull for any left overs too! hehe!

well pancake day today! and i all ready know what were having (other than pancakes of course!!!!!!!)

we have cheated this yr (as much as i like making them and flippin them!!! my mum's been and brought them!!!!!!!) but any ways!

savory topping!!!!

goat's cheese, mushrooms and spinach!! (saw it on lorrain show!!)

fry the mushrooms up in a little oil, break up the goats cheese (which will kinda melt and make a sauce!) pop in the spinach! (save a little bit of cheese for the top!)

leave to bubble for a few mins while you prepair the pancakes, in an over proff dish place 1 pancake on one side and 1 on the other (that's the prep really! lol) pour 1/2 the mixture on to 1 of the pancakes and roll it up, pour the other 1/2 the mixture in to the other pancake and roll that one up, put the left over goats cheese on the top of the rolled up pancakes and pop under the grill (or in the oven) for 2-3 mins

place on a plate and enjoy!!!

if you like a touch of bacon with your pancakes (using the same ingreadiants as above!) chop your bacon rashers in to 1cm peices and fry till crispy and follow on with the recipie as above with the bacon peices!!!

 

Were also doing a sweet one! :)

grated apple and cinamon (i'v not quiet figured how i'm goin to do this one so it's just goin to be an idea and a guide really!!!) (actually i'v figured it out all ready! haha)

place 2 pancakes on a baking sheet (prob add a peice of greese proff paper on the sheet so it's easier to get off!!)

grate the apple and add a drizzle of lemon pop the grated apple on top of the pancakes and add some cinamon on the top of the apple and roll up the pancakes

pop in oven for (a guess of) 2-3 mins till apple is nice and hot!

sever both of these straight out the over piping hot! :)

MOST OF ALL ENJOY PANCAKE DAY! :D I KNOW I WILL!!!!!!!!!!!!!!!!!

Hi, really cheap soup, 4 leeks sliced into rings, 4 large potatoes I cut these into chips just find it easier, place both in pan with a little seasoning, boil and then simmer till cooked, blend with hand blender or liquidizer, serve with bread and butter. Tastes really good and is filling.

If it is a little thick once blended you can add water.

You dont need to add stock cubes to this.

You can adjust the amount of leeks/potatoes according to how many you need to feed, I can feed approx 8 off this Smile

That sounds nice and quite straighforward to make. I do like the flavour of leeks but not that keen on them as veg on the plate ao this would be a good way for me to have them (and get them down my son)

Whilst peeling potatoes to make chips, I thought what a waste to throw the peelings so I deep fried them added salt and vinegar and have to say they were good.

am going to make a couple of mince and veg pies later, short crust pastry frozen mixed veg, mince, good and very much cheaper than shop bought pies.

You are good tiredmum making your own pies. C doesn't like pies, actually it's the pastry he dislikes, so not worth my while trying them, though of course I could do them for me, and freeze some.

It is so much cheaper, you can buy the foil cases in the pound shop so you could freeze individual ones, I think at our pound shop you get 10 in a pack. I am lucky all my children have always eaten whatever is put in front of them.

Chicken curry pie, for this you can either use up leftover curry that maybe you have made for dinner or you can make the curry just for the pie.

It is so easy, just make whatever curry you nomally would like, I usually do a tikka masala as we all like that, have also used biriyani, all you have to make sure of is that is is quite a thick consistancy which is why I have used up a curry that we have had for dinner as it tends to thicken as it stands. I use short crust pasty only becasue we like it you can use any that you prefer.

Make pastry and place in pie dish, fill with curry and place pastry over top, coat top with egg to brown pastry, cook in oven till golden brown, yummy and can be served hot or cold with a little salad

I must say I had never heard of curry pie until you mentioned it the other day, tiredmum. I don't think there would ever be any leftover curry here, so would have to make a giant batch.

Re pastry, one thing I sometimes do is buy a ready-baked savoury pastry case (they are usually with the meringues and jellies at the supermarket) They cost about 60p and then you can put whatever filling in you like, the pastry stays crisp as well

Runner beans and prawn curry

ingredients

2 large onions sliced thinly

3 cloves of garlic crushed

500g pack of raw medium prawns, peel and de-vain and washed

2 large pack of runner beans, sliced thinly

1/2 teaspoon of cumin powder, 

1/2 teaspoon of coriander powder,

1/2 teaspoon of turmeric powder,

1/2 -1 teaspoon of chilli powder,

3 teaspoonsful of mixed curry powder,

1 1/2 teaspoon of salt

fresh coriander cut 

lemon juice

2 table spoon of oil

 

heat the oil in the pan, add galic to brown slightly then add sliced onion and cook till golden brown. Add salt and stir with a bit of water. Then add all the spices and allow the spices to cook for a about 20 minute adding water intermittently. Do not allow to burn. once the raw smell of the spice has gone and the oil has surfaced. 

Add the sliced runner beans and cook for 20 minutes, then add the prawns with a small amount of water. Add the chopped coriander and allow to cook for couple of minutes.

Add the lemon juice to finish and serve with plain rice. Laughing

That sounds very nice and spicy!!! I bought a jar of jerk sauce the other week and me and son had it with chicken, the tops of our heads nearly blew off, we both like spicy food but this was the hottest thing we had ever tasted.

You mentioned packs of broad beans, I find it hard to get them fresh they seem to do them tinned though Laughing.....oh right I see you have changed it to runner beans now, ah I understand.

Yeah. you can use sliced frozen beans as well, though fresh is better.

I tend to like spicy food when I have a cold.

Yes I enjoy cooking too, The dinner we had was lovely, my friend and I only live 3 doors apart so we take tunrs in cooking, it saves a lot of money and also gives the other a break so it works well xxx

Lamb/ mutton curry

Ingredients

Vegetable oil (3 table spoons)/ use less if you prefer

1/2 tsp of five spice

3 large onions (thinly sliced)

3 large cloves of garlic (chopped/crushed)

2 inches of fresh ginger (grated/blended)

2 1/2 tsp of salt

1 small stick of cinnamon

6 cardomom pods

6 cloves

6 whole black pepper corns

1 bay leaf 

2 lb of lamb or mutton cut in 1 1/2 inch pieces

3/4 tsp of cumin powder

3/4 tsp of coriander powder

1/2 tsp of turmeric powder

1 tsp of chilli powder

3 tsp of mixed curry powder

1 tablespoon of chopped tinned tomato

1/2 teaspoon of pataks mixed pickle

fresh coriander

Method

Heat oil in the pan, add five spice when it starts popping add garlic, once garlic is slightly browned add the meat, once meat is browned add the ginger, cook for 5 mins. Then add the onions and soften, add salt, cinnamon, cloves, cardamoms, whole black peppercorns, bay leaf- cook on a slow heat for 45 mins.

Once everything has soften, add the cumin, coriander, turmeric, mixed and chilli powders, allow the spices to cook for a about 20 minute adding water intermittently. Do not burn. Once the raw smell of the spice has gone and the oil has surfaced. Add the tinned tomatoes and pickle. Cook for another 10mins, add enough water to cover meat and add fresh coriander. Leave to simmer for 15mins. 

Serve with plain rice/ naan and cucumber, coriander, spring onion salad.

All I will say is, write down your menus for the week ahead together with all the ingredients.  Take the list to the supermarket with you and just buy what you need for that week.  A supermarkets own branded stuff is a sure winner.  If you have any food left over, freeze it and it can be used again.  Sometimes if you want something quick and tasty for the children, you will have something ready to be defrosted straight from the freezer.  Money is tight since I've split and this really does work. x

How'd you do! How's bout some lovely Easter Hot cross buns :D ... HOMEMADE!!!

there's a lot too it but if you follow the instructions it's actually suprisingly EASY!

you will need ... pre heat the oven to 180dc/300df/ gas mark 4! 

Icing syringe and a pastry brush!

Ingrediants...

450g (1lb) Strong bread flour

1 Teaspoon salt

2 Teaspoons ground cinnamon

2 Teaspoons ground allspice

7g (1/4 oz) dried yeast

75g (3oz) raisins (i used currents!)

grated rind on 1 Orange, Lemon and Lime

100g (4oz) caster sugar

50g (2oz) butter

250ml (8 1/2 fl oz) milk

2 Teaspoons vanilla extract

1 egg - beaten

 

For the paste (cross)

75g (3oz) plain flour

2 Tablespoons sugar

100ml (3fl.oz) water

 

For the glaze:

2 Tablespoons brown sugar

3 Tablespoons milk

1 Tablespoon mamalade

 

What to do! :)

1, Sift in the flour, salt and spices, into a large bowl and mix in the yeast, raisins, rind and sugar.

2, Next, add the butter to a saucepan, stir in the milk and vanilla extract and heat untill warm, Whisk in the egg, then add the warm mixture to the flour mixture. Form a dough by kneading the mixture on a floured suface for 10 minutes untill it is smooth and elastic. .... (ok at this point i did cheat! i got the elctric mixer out with the dough hucks attchments and kneaded it that way for about 5 mins adding in a little extra flour when it got a bit sticky!)

3, Divide the dough into 12 buns, cover with a damp tea towel and leave in a warm place for about 90mins, untill doubled in size. (they say 12 but when i finished makin them i had about 5 really big ones so could have got away with making even more than 12!!! also after 45mins they had doubled in size!)

4, mix all of the paste ingreadiants together and put it into an icing syringe. Pipe a cross on to each bun and bake in the preheated oven for 10mins. Reduce the heat to 150dc and bake for a further 15mins. Meanwhile, mix together the glaze ingreadiants and lightly brush the buns, before leaving to cool on a wire rack. (now i didn't have all the ingreadiants for the glaze! (minus the sugar!!) so i just had the milk and marmalade (which was lemon and lime flavour!!) and that worked just as good, extra sticky EXTRA YUMMY glaze!)

now the paste, i used the same amounts as they told me to but found that this was too runny and faded away when they were cooked, so put in some more flour to make it slightly thicker!

I also made these using SOY MILK and VITALITE spread so my mum could have them! and they have turned out just as good as when using cows milk! :) I'v not gone as far as making them with Gluten free flour yet but from what i know about that brand of flour being 99% the same as wheet flour i gues they will still work out!

And the best tip to making these hot cross buns is not to work out the ingreadiants but to just work them out as you go along! so read the instructions and do the ingreadiants that you need as and when you need them (if that makes sence!)

These are super YUMMY hot cross buns and i'd HIGHLY consider attempting to make them for Easter! :D ... if not any time you like!!!!!

I cant see if i'v made this note or not! lol but a BIG surjestion is to put some grease proof paper on the trays and grease that! lol I made a 2nd batch up today and didn't grease the paper so i ended up tryin to remove the buns from the paper ... which was hard! lol (and hot!)
